lui trouver un nom: je veux parler du pain ou cake aux fruits que j'ai inventé pour
continuer à manger de petites douceurs malgré le fait que je veux éviter le
sucre et les graisses saturées.

Servan-Shreiber, et je suis maintenant dans la lecture du Dr Beliveau...
J'apprends beaucoup et j'adore ça. J'ai le sentiment qu'en suivant leurs
conseils, je peux agir pour mon corps et contre les cellules cancéreuses qui
l'habitent! C'est bon pour mon corps et pour mon moral car j'adore
cuisiner!
Alors je mets
progressivement au point une série de recettes adaptées à mes goûts et aux
ingrédients que je peux trouver au supermarché du coin (fort heureusement
le rayon produits bio et produits santé grossit au fil des mois!).
Soyons honnête,
j'ai fait quelques essais catastrophiques. Le pire a été ma tentative de lasagnes
végétariennes aux champignons, au curcuma et à l'ail, sans sauce blanche ni parmesan.
J'ai remplacé la sauce blanche par du fromage blanc écrémé qui a formé à la cuisson une
croute sèche qu'il a fallu casser au marteau piqueur. C'était acide
à en pleurer! Arggh!!
En revanche, je suis
fière de ma paella au curcuma et au riz complet.
Mais ma recette originale préférée est mon pain aux fruits, qui est une sorte de cake-santé. C'est sans sucre ajouté (mais évidemment c'est plein de sucres de fruits... c'est donc un compromis). Et surtout, c'est sans beurre et plein de bonnes choses!

Dans un saladier
mélanger les ingrédients qui feront le fond liquide:
- 3 bananes très
mures écrasées en purée
- 1 gros oeuf ou
2 petits- 120 ml de yaourth (demi-écrémé ou allegé et sans sucre bien sûr)
- 120 ml de compote de pommes ou d'abricot (sans sucres ajoutés)
Puis il faut
ajouter le "sec", c'est-à-dire les farines, levure etc:
- 300 gr de
farines complètes (personellement je mets 200gr épautre et 100gr seigle)
- une poignée de
graines de lin écrasées (pas pour le goût mais pour les oméga-3!)- une poignée de céréales d'avoine (car l'index glycémique de l'avoine est très bas ce qui est vraiment bon pour ce qu'on a).
- un sachet de levure chimique (pas sûre que les puristes apprécient mais je n'ai pas trouvé de meilleure solution pour le moment)
Ensuite on mets
plein de fruits secs et / ou des noix! Moi je n'aime pas les noix dans les
gateaux donc je ne mets que des fruits secs:
- figues sèches,
pruneaux, canneberges, raisins secs... je les rince bien, je les laisse tremper
un peu dans l'eau avant pour qu'ils s'assouplissent un peu. Je les rince à
nouveau plusieurs fois et je les coupe en petits morceaux avant de les ajouter à la préparation finale.
Je mets le tout
dans un moule à cake (avec une feuille de papier à cuire à l'intérieur pour
éviter d'avoir à graisser le plat). J'enfourne dans le four à 220°C pour 1h15.
On le déguste
avec sa tasse de thé vert Sencha qui a infusé 10 minutes!

Bon d'accord, il n'y a in ail, ni curcuma, ni brocolis... Mais l'index glycémique devrait être bien plus bas que celui de la plupart des autres gâteaux. Ca ne soignera pas notre cancer mais ca permet de "craquer" pour quelque chose sans culpabilité car c'est bourré de fruits et graines! Evidemment c'est aussi plein de calories donc il ne faut pas en abuser. On peut mettre des tranches restantes au congel :-)
Si j'ai le temps
ou si je reçois une masse écrasante de courriels me suppliant à genoux, je
partagerai aussi ma recette de paella, ainsi que mon Wok préféré (cette fois
ci, il y aura ail, curcuma et choux au rendez-vous!).
Oh et maintenant
il faut que je traduise aussi en anglais pour les copines... C'est moins drôle!

Recipe for fruit bread
We'll have to
find a name for it: I mean the fruit bread or cake, that I invented to continue to enjoy some
sweet things despite the fact that I want to avoid sugars and saturated fats.
I've read David
Servan-Schreiber, and I am now in the reading of Dr. Beliveau... I learn a lot
and I love it. I feel that by following their advice, I can do something good for
my body and fight cancerous cells that inhabit it! It's certainly good for my
spirits as well because I love to cook!
So I've gradually
developed a series of recipes based on the anticancer ingredients they recommend.
It has to be adapted to my tastes and to the ingredients I can find at the
local supermarket (thankfully their selection of healthy products and organic
products grows over the months!).
Let's be honest,
I did some catastrophic experiments. The worst was my vegetarian lasagna with
mushrooms, garlic and curcuma, without the white sauce nor the parmesan. I replaced the white sauce with skimmed cottage cheese. Oh dear, it formed a dry
crust on top of it while baking, and we had to break the crust with a pneumatic drill. It was so acid we could
have cried! Arggh!
But I am proud
of my paella made with curcuma and brown rice...
Hozever, my favorite original recipe so
far is undoubtedly my fruit bread or fruit cake. There is no added sugar (but of course it's full
of fruit sugars, so it's a compromise ...) - and most importantly, there is no
butter and it's full of good stuff!
Here's the recipe:

In a bowl, mix
the ingredients that make de "liquid" part:
- 3 very ripe
bananas, mashed
- 1 large egg or
2 small- 120 ml of yogurt (low-fat or reduced-fat and sugar free of course)
- 120 ml of apple or apricot sauce (no added sugar)
Then we must add
the "dry", that is to say, the flour, yeast etc:
- 300g of whole grain
flours (personally I put 200gr of speltweat or "spelt" in Dutch; and
100gr of rye flour or "rogge" in Dutch)
- A handful of
crushed flaxseed (not for its taste but for its omega-3)- A handful of oatmeal cereals or "havermout" in Dutch (because the glycemic index of oatmeal is really low so it's good for what we have).
- And baking powder (not sure that the purists will appreciate but I have not found a better solution till now)
Then you can add
tons of dried fruits and / or nuts! I do not like nuts in the cake so I put these
dried fruits:
- Dried figs,
prunes, cranberries, raisins... I rinse them well, I let them soak in a bowl of
water until they soften for a bit. I rinse them several times before cutting them in small pieces and adding
them to the final preparation.
I put everything
into a loaf pan (with a sheet of baking paper inside to avoid having to grease
the dish). Bake it in the oven at 220 ° C for 1h15min.
Enjoy it with your
cup of Sencha green tea that has infused for 10 minutes!

Okay, there is no garlic, turmeric, nor broccoli ... But the glycemic index will be much lower than in most other cakes. It does not heal our cancer but if you need to enjoy some sweets from time to time, you can enjoy a slice of this bread without guilt because it's filled with fruits and seeds and not with white flours and saturated fats.
Obviously it's
also full of calories so do not abuse it. You can put the remaining slices in the
freezer for another day :-)
If I have time
or if I receive an overwhelming amount of emails begging me to their knees, I'll
also share my recipe for paella, and my favorite Wok: This time, there will be lots
of garlic, curcuma and broccolis to go !

Catherine, a friend of mine (she always has been interested in nutrition, and tells me what to eat and what not to eat) just sent me an email that explains the advantages of eating bananas with dark patches on ellow skin. The email says that eating that type of banana is - "Anti Deadly Cancer" food.
The article that she sent me goes to say that:
"The more dark patches it has the higher will be its immunity enhancement quality. Hence the Japanese love bananas for good reason.
